1 nos red onions (medium size)
3 tbsp dried anchovies (medium size)
2 tbsp belacan (shrimp paste)
2 tbsp chilli sauce
1 tbsp sugar
125ml water
2. Wash the anchovies thoroughly, then drain it dry.
3. Heat up the oven for 5 mins. (i use small microwave oven.)
4. Place the anchovies onto the tray of oven, and spread it evenly. so that the anchovies will be dried and crisp evenly.
5. Cook the anchovies for 5 mins. Remove from tray.
6. Slice the belacan (shrimp paste) thinly. Belacan paste can come in many form. Powder, Block or Dish. The Dish form looks like a stack of 5 mini CDs.
7. Place the belacan onto the tray of oven and dry it for 5 mins. Mash it up into powder form when it is dried. (of course u have to transfer the belacan to a plate for easier mashing management.)
8. Heat the oil / butter / margarine in a pan.
9. Add the onions. Stir it well.
10. Add the anchovies. Stir.
11. Add the belacan powder. Stir.
12. Add the chilli sauce. Stir.
13. Add the sugar. Stir.
14. Add the water. Stir.
15. Let it boil for 2 minutes.
